These Banana Choc Chip Muffins have enough sugar to taste sweet and delicious but not enough to have the kids running circles around the living room. Delicious too!!!

Ingredients

  • 1 cup 1 cup Ripe Banana

  • 2 lg 2 lg Eggs

  • 3/4 cup 3/4 cup Milk

  • 1 tsp 1 tsp Vanilla Bean Extract

  • 3 tbsp 3 tbsp Peanut Butter

  • 1 cup 1 cup Plain Flour

  • 1 tsp 1 tsp Cinnamon

  • 1/4 cup 1/4 cup Brown Sugar

  • 1 tsp 1 tsp Baking Soda

  • 2 tbsp 2 tbsp Ground Flaxseed

  • 1/4 tsp 1/4 tsp Salt

  • 1/2 cup 1/2 cup Chocolate Chips

Directions

  • Preheat oven to 200c (400f)
  • Mash Banana until very smooth with a masher
  • Mix together flour, brown sugar, flaxseed, cinnamon, baking powder, baking soda and salt in a large mixing bowl
  • Add banana, eggs, milk, peanut butter and vanilla bean paste and stir until completely mixed
  • Lastly add the chocolate chips
  • Spoon batter into cake tins in a muffin pan. Fill the cake tins up about half way. This will ensure a good rise rate. Put a few chocolate chips on top for presentation.
  • Bake for 15-20 mins. Test with a cake tester or wooden kebab stick until it comes out clean and muffins are looking golden and delicious
  • Let it rest for 5 minutes or so and then remove each muffin to a rack for cooling.
